Spotlight on Brandi Lott - the queen of Sweet Treats at the Birdhouse
We think it’s safe to say that everyone secretly has a little bit of a sweet tooth. The Birdhouse family surely does! Lucky for us, we have an in-house master of confections who’s magical abilities can make even the ickiest health foods taste like a treat handed down from heaven. So who is this all-things-sweet extraordinare? Let us introduce you to Brandi Lott, the mastermind behind the delicious sweet treats at the Birdhouse Cafe. Hello— who else thought they HATED collagen until tasting her collagen cheesecakes?
Brandi has been at the Birdhouse for almost a year. In that short time, she has taken Katie’s original creation of healthy, protein packed chocolate peanut butter cups & clean cheesecake bites and expanded it to a full line of sweets ranging from protein chocolates to vegan cheesecakes. Whether it’s dairy free muffins or finding a way to sneak avocado into everything we eat at the Birdhouse, Brandi’s creativity & confectionary expertise never seem to fail to create something beautiful, delicious & delightfully good for you.
Brandi holds an associates degree in culinary arts and has an obvious passion for sweets. This passion led her all the way to New York City where she worked as the Chef de Partie of Viennoiserie at Bouchon Bakery in Rockefeller Center, training under Chef Thomas Keller. After training in New York, she came back to South Mississippi and graciously shares her talents with our tastebuds every day at the Birdhouse Cafe.
Even when she’s not baking up magic at the Birdhouse, you’ll still find her in the kitchen. Cooking is her greatest passion. From creating new menus for her family to whipping up a new soup, cooking brings her boundless joy. Also, can we get a slow clap for this wife & mom of five? Is anyone else scratching their head, befuddled as to how she keeps it all together while keeping the cheeriest disposition known to humanity? Katie and the Birdhouse crew are so thankful for this amazing woman and everything she does.
Brandi’s favorite dessert is brownies. She cleaned up her favorite treat and wants to share the recipe for you to whip up a batch at home!
Brandi’s Avo Brownies
Ingredients: 1- Ripe Avocado, 1/2 cup melted coconut oil, 3/4 cup coconut sugar, 3/4 cup full fat coconut milk, 1 tsp vanilla, 1 cup whole wheat flour, 1tsp baking soda, 1/2 tsp salt, 1/2 cup unsweetened cacao powder, 1/2 cup vegan chocolate chips
Preheat the oven to 350. In a food processor, add avocado, oil, sugar, milk, and vanilla. Mix until smooth. (Aprox 20-30 seconds) In a mixing bowl, add flour, baking soda, salt, cocao, and chocolate chips. Pour wet ingredients into the dry. Whisk until well combined. Spread the batter evenly into an 8' square pan that has been lightly coated with coconut oil cooking spray. Bake for 15-20 minutes until an inserted toothpick comes clean. Once cooled cut into squares and serve. The brownies will stay fresh up to 3 days in an airtight container at room temperature. For a chewier brownie slightly under bake.
